The sugar saucepan is the typical utensil for making caramel, well-known of pastrymen and pastrywomen. Made all of copper, it has to be used with great caution because of the high temperature that sugar requires to caramelize.

Copper is a “soft metal” which explains why it is the best heat-conducting metal of all metals. Copper requires a little more care than most other cookware. While it is fine to let the copper exterior darken with age (otherwise known as “patina” or “verdigris”), cleaning the inside of unlined copper is essential. To remove any verdigris on an unlined cookware, use a vinegar-salt solution or rub it with lemon sprinkled with salt. Rinse and dry the cookware.
It is not advisable to use a dishwasher for washing copper cookware due to the harsh chemicals used in some dishwashers that could shorten the life span of your cookware. Never use cleaners containing bleach to clean copper cookware – bleach is corrosive and will cause your cookware to pit. Bleach will erode the stainless steel interior and should not be used on any Mauviel cookware. Mauviel offers Copperbrill copper cleaner for cookware with copper exterior (currently not being sold on this website).
Do not use high heat for a long period of time. Do not leave empty cookware on a heated burner for an extended period of time. Do not use metal utensils on the non-stick cooking surface. The use of scouring pads, steel wool, abrasive cleansers, bleach and/or oven cleaners is not recommended and can scratch or damage your cookware. Misuse of your cookware will void your warranty.
Warranty: See Return, Refund, and Exchange Policy, Section D.
About the Brand
Founded almost 200 years ago, in 1830, by Ernest Mauviel in Villedieu-les-Poêles (aka the copper town), located in the Manche department of Normandy, northwestern France, Mauviel has been producing hand-made copper cookware, applying the town’s 800-year medieval tradition of copper working, while innovating like in the case of the M’6 S collection. Mauviel also offers stainless steel cookware. For its know-how and craftsmanship, Mauviel has been granted a Living Heritage Company (Entreprise du Patrimoine Vivant) label by the French government.
